Boutique Texas Bakery Expands with Franchising

Lucy Hines and her husband, Randy, bought Kolache Shoppe in 2014 and recently began franchising the brand in Texas.

Kolache Shoppe, a boutique bakery that specializes in kolaches and coffee, recently signed its first franchisees. The first franchise, owned by Not Bread Alone LLC, will mark the brand’s third location in Texas.

Randy and Lucy Hines bought Kolache Shoppe in 2014 from former owner Erwin Ahrens. The husband and wife team said Ahrens had the “best kolaches in the area” and sought to learn from him. After years of Hines’ apprenticeship and 44 years of Ahrens owning the bakery, he sold the business to the couple. Kolaches are pastries with fillings such as fruit or meat.

Kolache Shoppe plans to continue expanding through franchising. The new franchise territory covers the areas of Prosper, Frisco and McKinney in Texas. Kolache Shoppe will offer ongoing support, marketing guidance, comprehensive training and exclusive territory to franchisees.
